The Olivello Toscano project is developed in the organic olive farming, to reduce crop waste and create new value through a win-win circular economy system in which all participants benefit and eliminate waste. The use of a new cold technology makes avoid releasing any polluting residues in the environment at the end of the production cycle, but only organic fertilizer for agriculture. The production process requires less energy than traditional production systems that use heat. The aim of the project is to preserve the native heritage of olive polyphenols in the finished product (organic liquid olive sauce), which are of great value for cardiovascular health, and allow consumers to reduce easily their daily consumption of salt
