Ingredients: Toasted and smoked Piedmont hazelnut. Gluten free. An idea that was quickly born out of a long-standing friendship, a fine intuition and a great desire to experiment: hazelnuts from Piedmont of the highest quality from the Ca' dei Bianchi company, smoked to perfection by the visionary and unconventional Claudio Cerati. The hazelnuts are smoked in the same way and with the same process used to smoke the highly prized Upstream salmon: a delicate smoking process that does not cover the flavour of the hazelnuts but enhances it, made with beech wood from the Emilian Apennines; a smoking process that Cerati himself describes as a smell that reminds him of his grandmother, when she used to light the fireplace in the mountains. A product with a refined flavour, elegant but also intense, ideal to accompany the most sparkling bubbles.
