Future and sustainability of catering in Italy and the World
In keeping with the path of CHIC RESPECT, the project conceived by CHIC Association on the theme of sustainability in restaurants, we discover how other sectors of the industrial world and representatives of the international restaurants face this challenge. Evidence of best practices, innovative ideas and projects to protect the environment around us and promote ethical choices in the food sector. A delegation of CHIC Chefs, including the President Angelo Sabatelli, starred Michelin guide owner of Angelo Sabatelli restaurant in Putignano, will be the spokesperson for CHIC RESPECT project, launched in 2019 to take care to the environment in quality Italian restaurants.
Among the foreign guests, some leading personality of a modern, healthy fine dining based on respect for the environment, will be present: Nadia Sammut, Chef of the La Fenière restaurant, the first entirely gluten free restaurant awarded a Michelin star; Douglas McMaster of Silo, "Zero Waste" restaurant in London, Christof Ellinghaus entrepreneur and founder of the first wine bar / restaurant nature in Berlin, together with researchers, digital and sustainable mobility experts.
