The event's programme covers a comprehensive range of topics, including case studies and insights into regions and products, to get you better prepared to tackle digitalisation.
Digital technology and food: a fascinating combination, though not always easy to understand. And most importantly, a business development opportunity you can’t let slip away. You need the right skills and know-how. Such as? To address this need, Evolution Plaza, the TUTTOFOOD 2021 event space centred on digitalisation - held at fieramilano from the 22nd to 26th of October - offers an unparalleled schedule of events for the Food & Beverage industry.
Naturally, blockchain technology is at the forefront, which, on Friday the 22nd of October from 15:30 to 16:40, will star in the conference, Blockchain Revolution, featuring Guest of Honour Sen. Gianmarco Centinaio - Undersecretary of the Ministry of Agricultural, Food and Forestry Policies, Gianpaolo Sara (Euranet), Michele Zema (CSQA), Pietro Grassano (Algorand) and Valerio Raggi (Agronica) discussing the blockchain opportunities for food traceability, for which it represents 43% of available solutions, from the perspective of Agriculture 4.0, which was already worth €540 million globally in 2020 (4% of the market).
Meanwhile, as the latest solutions make increasingly clear, technology can also help with legal challenges, such as compliance with food safety regulations. Saturday the 23rd of October 2021, from 13:30 to 14:30, Text: 0% Paper, 100% HACCP - Food Safety in the Digital Age will be discussed: even HACCP monitoring and inspection processes can be digitised and made automatic by using online smart measuring tools.
On Sunday the 24th, from 13:30 to 14:30, Made in Italy takes centre stage in Green Pass: Who benefits from open innovation, which takes a closer look at key elements for companies - including and especially the industry's many SMEs - if they want to seize innovation opportunities, such as those offered by NRRP funds. With even more Made in Italy, focusing on product or regional specialities, Mediterranean diet icons, such as Extra Virgin Olive Oil will be discussed with Gaetano Bonasia (Italia Olivicola) in A blockchain with national coverage for the olive oil supply chain. Extra virgin olive oil... like you've never seen before, Monday the 25th of October from 12:30 to 13:00.
Also on Monday the 25th of October, from 10:30 to 11:30, another of the hottest current topics is discussed in Circular Economy, from theory to practice: insights and examples useful for transitioning to circular economy approaches on a national, regional and global scale. This will be a chance to present the results of ViewPoint research promoted by DNV that involved 800 companies worldwide, over 100 of which are in the F&B sector, on the rate of circular business model adoption.
On Monday the 25th of October, starting from 15:00, Evolution Plaza will also host the National Congress CHIC - Charming Italian Chef, with the theme Sustainability and the future of Italian and Global catering. Chairman Angelo Sabatelli from the self-titled Michelin-star restaurant in Putignano, Puglia, will be the spokesperson for CHIC RESPECT, founded to place greater emphasis on the environment across fine-dining Italian restaurants, and will be joined by guests such as Nadia Sammut, Chef at La Fenière, the first entirely gluten-free restaurant with a Michelin star, Douglas McMaster from Silo, the “Zero Waste” restaurant in London, and Christof Ellinghaus, founder of the first sustainable wine bar/restaurant in Berlin, alongside researchers and digital and mobility experts.
