Veal and sustainability: integrating environment, health, and gastronomic culture
In the context of the challenges currently facing the European agri-food system, sustainability hasbecome a key lens through which to understand the evolution of production chains. From this perspective, the veal sector stands out as a meaningful example of integration between production efficiency, environmental responsibility, and resource valorization.
The roundtable, organized by ASSOCARNI as part of the European veal promotion campaign, will provide an opportunity to discuss the role this sector plays within a modern and responsible
agri-food system.
The discussion will focus on the sustainability of the veal value chain, exploring its various dimensions: from responsible production practices and animal welfare considerations to the valorization of by-products such as hides, as well as its structural relationship with the dairy sector, embedded within broader value chains.
